Another year has rolled around and we are again putting vegetables in jars and canning them. Today we start on the first of many quarts of green beans. Thankfully I didn't have to pick them, that is one thing I do not like doing and that is picking.
Blackberries, tomatoes, okra, corn... I can handle but green beans... well lets just say this, I will snub and snap, pack into jars, salt them, pour water in the jars, put them in the canner and all that wonderful stuff, just please don't ask me to pick them...
Back to the beans at hand. We should have 14 quarts by this evening. And I haven't a clue as to how many more we will be putting up. I'm guessing as many as we can. And the same goes for corn, tomatoes (and any and all tomato goodness besides juice), okra pickles and frozen, pickled peppers, peaches, apple sauce, and maybe some other canned and frozen goodies.
